Michael is the cuke preparer of our household, and always peels. On the rare occassions I pitch hit 4 him, I don't peel but then he chastises me as if the peel is poison. I guess I assumed he is right but I see the responses here vary a little and the fact that u r even asking makes me wonder about all this.

i would do what they do in restaurants and peel half of it. just four quick swipes with a peeler, leaving a little skin between each swipe, so you have little strips of skin. i don't like a lot of skin when i dip cucumbers but some doesn't bother me (and that way you still get some of the extra nutrients, oh and it is quicker.)

If you do peeled, you have to scoop out the seeds and middle with a teaspoon before peeling and slicing. Otherwise, you need the peel on, to keep them firm.

So it's peeled & scooped versus unpeeled!

Peeled and scooped is 'posh'!

Maybe the cucumbers over here are more firm? They do not require scooping to stay firm enough to pick up as spears for dipping. I like the seeds/juicy part, anyway. :)
